This winter, my wife decided to (finally) use up the sheep milk stored in the freezer. She made a Caerphilly style cheese and some Pont l’eveque style cheese. I figured that in honour of the first sampling I’d make a cheese trier, which is sort of like an apple corer but makes a smaller, deeper hole. One tastes the core but puts the outer plug back in to re-seal the cheese. Ummmm. The trier worked and now we are attempting to keep our hands off the cheese while it continues to ripen.
